BONELESS BANGUS BISTEK ALA POBRE

One of our favorite Filipino dishes is the bistek tagalog. It’s basically a soy sauce stew with lots of white onion as toppings and a generous sourness of kalamansi juice. Kalamansi is a type of lime fruit here in the Philippines that is rich in vitamin C.

The original version of the “Bistek” dish is cooked with sliced Beef tenderloin. But there is a healthier and may I say better option which is replacing the beef ingredients with FISH. The best fish to use with this dish is the Bangus. (milkfish).

Pangasinan province produces the tastiest Bangus in the whole country. Although Bangus from other regions are still of good quality.

So, if you’re planning to visit the Philippines. Try ordering this dish in any of our native restaurants and guaranteed you will like it.

Below is how I cook my version of BONELESS BANGUS BISTEK ALA POBRE.

BONELESS BANGUS ALA POBRE

INGREDIENTS

1 whole head of Garlic. Chopped. For toasting.

2 medium white onions. Sliced ring-type (onion rings)

1 large whole boneless Bangus.

2 cups cooking oil for frying.

2 tbspn butter (salted or unsalted)

2 cloves garlic (chopped). For sauteing

2 slices ginger (chopped)

½ cup soy sauce

½ cup water

2 tsp.. white sugar

1 tsp. starch

Juices of 4 to 5 pcs kalamansi.

PROCEDURE

1.      Toast the chopped garlic until gold brown and set aside.

2.      Caramelize the white onion ring until soft and light brown. Season with a pinch of salt and sugar. Then set aside.

3.      Season the Bangus fish with salt and pepper and juice of 1 to 2 kalamansi.

4.      Coat the whole fish with flour and deep fry until cooked and golden brown.

5.      For the sauce. Sauté the chopped garlic and ginger in butter.

6.      In a medium bowl combine soy sauce; water; sugar and corn starch and pour in the pan where the garlic and ginger are sauteing.

7.      When the sauce is slightly boiling pour in the kalamansi juice.

8.      Turn off heat.

 

PLATING

1.      Place the fried bangus on a serving plate.

2.      Pour in the bistek sauce.

3.      Top the caramelized onion.

4.      Top the toasted garlic.

Serve hot with freshly cooked steamed rice.
